If you live in the southwest US as we have for many years, you likely have enjoyed many tacos, with many ingredients. Tacos are awesome as are many Mexican dishes. Something that is happening for me during the pandemic is even greater time spent cooking our own food and so why not make it very good, and why not tacos? Two recent taco nights for us included my preparations of 1) baked haddock fish tacos with mango slaw on flour tortillas and 2) tacos al pastor: achiote & chiles marinated pork with grilled pineapple and raw salsa on corn tortillas. I tried two salsas: salsa cruda verde mainly of tomatillos, seranos & cilantro and salsa brava of habenero, onion and lime. The mango salsa was very good as was the salsa brava, but super spicy - complimenting the sweet pineapple and perfect with the deep red marinated pork.
